Over-the-top but surprisingly approachable, this twist on the classic style starts with several types of malted barley, rye, oats and wheat. Robust flavors of vanilla, espresso, whiskey, chocolate and roasted grain are balanced by hints of date and plum, with just enough hops to round it all out. Roughly one-third of the final blend is freshly brewed beer; the rest is aged for up to a year (or more!) in both first and second use whiskey casks.

Based loosely on the Smokestack Series’ The Sixth Glass, this abbey-style quadrupel is separated into a number of oak bourbon barrels where it ages for varying lengths of time, some for up to three years. Cherries are added to make up for the “angel's share” of beer lost during barrel aging. Selected barrels are then blended for optimum flavor. The resulting beer retains only very subtle cherry characteristics, with toffee and vanilla notes coming to the fore.

Throughout the ages, man has been fascinated by the quest for hidden knowledge, the search for the secret to transforming the elemental into the extraordinary, the simple into the sublime. Ladies and gentlemen, we present for your consideration this exotic, inky concoction, the almost magical creation of our modern day alchemists who have turned humble grains—barley, wheat, rye, and oats—into black, liquid gold. Layers of complex flavors slowly emerge from the glass: espresso, roasted fig, crème brulée. Belgian yeast provides a plum-like fruitiness, noble German hops reveal spicy, herbal notes, while the rich, velvety mouthfeel mellows to a dry, smoky finish.

This assertively flavorful grain is more often associated with whiskey than with ales. Even in that arena, it has largely been eclipsed by corn and barley, the sources of bourbon and scotch. But when we procured some seasoned barrels from our friends at Templeton Rye, we asked ourselves, “Why not?” Why not brew a rich, tawny rye ale, then mellow it in the warmth of charred oak rye whiskey casks? Two kinds of malted rye provide spicy sweetness, giving way to notes of vanilla, charred oak and the citrusy tang of Citra and Styrian Golding hops before easing into a dry, lingering finish.

Medium bodied and effervescent, the aroma evokes dried fruits, earth and cocoa, with just a hint of spicy hops. Mouthwatering flavors of Valrhona chocolate from Dominican cacao nibs weave seamlessly between layers of honey, brown sugar, caramel and nutty malt, deftly harmonizing and rounding into a luscious, lingering finish.

The most sophisticated way to enjoy Port wine is straight up, or “neat,” in a proper port glass. The same rule applies to whiskey. But what about an imperial stout that’s been aged first in bourbon barrels, and then aged a second time in Ruby Port wine barrels? We believe that straight from the bottle into a glass is the most Proper Pour. Proper Pour spent 6 months in Ruby Port barrels that had been used at a distillery to age rye whiskey for 3 months. Because Ruby Port is a full-bodied, super sweet dessert wine, the rye that was finished in the port barrels isn’t super prevalent in the final beer, and that’s what the brewers were counting on.
